St. Patricks Day Lucky Pancakes

Ingredients
2 cups First Street Pancake Mix
Ingredients listed on the box
Green food coloring
Whipped topping
Lucky Charms cereal
Optional: maple syrup, powdered sugar
Directions
- In a mixing bowl, prepare the First Street Pancake Mix according to the package directions. Stir until just combined.
- Add 3–5 drops of green food coloring and gently stir until you reach your desired shade of festive green.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
- Pour about ¼ cup of batter per pancake onto the skillet.
- Cook until bubbles form on the surface and the edges look set (about 2–3 minutes).
- Flip and cook for another 1–2 minutes, until golden and cooked through.
- Repeat with remaining batter.
- Stack 2–3 green pancakes on a plate.
- Top with a generous dollop of whipped topping and sprinkle Lucky Charms marshmellow over the top.
- Drizzle with maple syrup if desired and serve immediately for the ultimate St. Patrick’s Day breakfast treat.
