St. Patricks Day Lucky Pancakes

Ingredients
2 cups First Street Pancake Mix
Ingredients listed on the box
Green food coloring
Whipped topping
Lucky Charms cereal
Optional: maple syrup, powdered sugar
Directions
  1. In a mixing bowl, prepare the First Street Pancake Mix according to the package directions. Stir until just combined.
  2. Add 3–5 drops of green food coloring and gently stir until you reach your desired shade of festive green.  
  3. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  4. Pour about ¼ cup of batter per pancake onto the skillet.
  5. Cook until bubbles form on the surface and the edges look set (about 2–3 minutes).
  6. Flip and cook for another 1–2 minutes, until golden and cooked through.
  7. Repeat with remaining batter.
  8. Stack 2–3 green pancakes on a plate.
  9. Top with a generous dollop of whipped topping and sprinkle Lucky Charms marshmellow over the top. 
  10. Drizzle with maple syrup if desired and serve immediately for the ultimate St. Patrick’s Day breakfast treat.
